Olives are harvested in the green to purple stage.

More Info: Olive trees are one of the first trees to be cultivated (2500 B.C. in Crete). Countries such as Spain, Italy, Greece, Tunisia and others traditionally export olive oil, which is the cornerstone of the agricultural economic development and sustainability of some of those countries. The tree was considered to be holy in Ancient Greece, and can be seen as a sign of peace in Christianity. The average life of an olive tree is between 300 and 600 years, and the oldest olive tree in the world was planted more than 3000 years ago!
