Origin: Latin America and the Caribbean

Tree Height: 5-6 ft.

Season: Year round, peak season Summer - Fall

Fruit Description: Widely varies in shape depending on cultivation habits, soil, and the climate, but pods are generally squat, oblong, to round with a creased and wrinkled appearance. Similar in shape to a habanero pepper, averages 4 in. in width and 2-3 in. in length, sometimes resembling a small hat. Medium-thick skin is glossy, and when young, the pepper bears hues of light to dark green, transforming to yellow-orange, and then to red when mature.

More Info: The word Ají means "chili pepper" in South American Spanish while Cachucha means “hat”, which describes the pepper’s cap-like shape. Cachucha chile peppers have a mild heat ranging 0 to 1,000 SHU on the Scoville scale, similar to the spice of poblano peppers. Though known to be mild, they have recently earned an unexpected reputation of sometimes being very spicy due to the Cachucha chile pepper being grown near and naturally cross-pollinating with other spicy peppers such as habaneros.

Ají dulce, ají cachucha , ajicito, or 'ají gustoso" is any of a variety of sweet perennial peppers found in Latin America and the Caribbean. It is most widely known in Puerto Rico and Venezuela, where it refers to a specific native variety of Capsicum chinense that is related to the habanero but with a much milder, smoky flavor. In the English-speaking Caribbean, it is known as seasoning pepper and is essential to a variety of traditional dishes.
